Wednesday Lunch - Meatball Soup


Hearty Meatball Soup




Ingredients

  • 12 Frozen Meatballs
  • 2 Links (approx 1/2 lb.) Sweet Italian Sausage
  • 1 Can Tomatoes (Diced)
  • 1 Medium Onion (Diced)
  • 4 Cups Beef Stock
  • 5 oz Fresh Spinach
  • 1 tsp Oregano
  • Generous sprinkling Garlic Powder
  • To taste Salt & Pepper


Directions

  1. Slip skins & crumble sausage
  2. Brown sausage & onions in large pot
  3. Add all ingredients except meatballs
  4. Bring to boil
  5. Reduce to simmer
  6. Add meatballs
  7. Cook 20-30 minutes until meatballs are hot
  8. Serve with crackers or bread
